Lemon Tart with Candied Lemon and Sugar Cookie Crust

Hello beautiful world!! There seems to be a month every year where I wake up and realize “oh my gosh. How did it go by so fast?” Today, looking at my lemon tree I realized. It’s spring!!
Spring, spring, spring. Lemons aren’t big enough for lemonade but they are small enough for my favorite…lemon curd :)

My favorite lemon curd recipe comes from Sugar Babies cookbook. (I only alter the sweetener)

I also used a sugar cookie crust and candied my own lemons. Both recipes are included!

lemon curd:
1/2 cup lemon juice
1 cup sugar
6 egg yolks
1 tsp of unflavored gelatin
2 tbls. unsalted butter

*Combine lemon juice (take out 2 tbls!), sugar, egg yolks, in medium pot and whisk until all combined.
* in a separate small bowl sprinkle gelatin on top of lemon juice and set aside
* place the egg mixture on top of low heat and whisk constantly. After a couple minutes, it will begin to noticeably thicken and will bubble.
* take off of heat.
*whisk in gelatin and butter
* pour into a cool bowl and cover with plastic wrap (plastic wrap directly touching the curd) and store in fridge.
*when ready for use, remove plastic wrap and whisk till smooth

Sugar cookie crust:
1/3 cup sugar
1/2 cup butter, room temperature
1 1/4 cups all purpose flour
1/4 tsp salt
2 tbsp milk
1 tsp vanilla extract

*preheat oven to 350
*cream butter and sugar until light and fluffy.
*add flour, salt, milk and vanilla.
*mix on medium speed until combined and it will clump together in your hand.
* press into a tart tin evenly, on the bottom and up the sides.
*bake for 20-25 min until a lovely golden brown.
* let cool completely.

Candied lemons:
1-3 lemons
water any amount to boil
2 cups sugar
1 cup water

*wash the lemons in a strainer (set strainer aside, you’ll need it later)
*slice lemons (not so thin about 1/4″)
* boil any amount of water.
* once boiling, add lemon slices and boil for one minute
*strain lemons and run cold water over lemon slices.
* over medium heat the 1 cup water and 2 cups sugar until sugar is dissolved.
*add cool lemon slices and simmer for one hour.
* take out lemon slices and place on a wire cooling rack and let dry for as long as possible.
